My husband and I are in love with game-day snacks such as nachos, burgers, chips and the like. The BCS National Championship game was on January 7th, which meant it was about a week too early to forget our “eat healthier” New Year’s resolution. So, I went to my kitchen and created a healthy game-day dinner that still managed to pack in the flavors we have all grown to love from tailgating.
I wanted some crunch for chips and I happened to have some collard greens. I’ve made kale chips before and figured I could do the same with collards. This recipe was so easy and provided the perfect potato chip crunch I crave.
Game day typically calls for nachos, so I made some cheesy rice and beans with onions to fill the greasy, oozy, crunchy, spiciness of nachos. It hit the spot!
And of course- burgers! I had some ground turkey meat in my freezer, so I defrosted it, doctored it up with this recipe and made bite-sized turkey sliders. My husband said it was actually one of the best burgers I’ve made – and it was incredibly easy.
