I came home last week craving mac & cheese. It was one of those hankerings that HAD to be satiated or else I would be dreaming of cheesy goodness – and yes. I have had nights where chedderry-gooey deliciousnes paid me a visit.

This simple recipe went off without a hitch. I thickened up the cheese sauce with some Greek non-fat yogurt, added some ground turkey, veggies and topped it with a little bit of shredded cheddar cheese. Overall it’s a healthy version of a rich and gooey mac & cheese that we all love.
